St. Patrick’s Day Menu, Solved

It’s been a busy couple of weeks in the kitchen, but we couldn’t let St. Patrick’s Day sneak by without sharing a few favorites. Whether you’re craving something cozy like shepherd’s pie or beef and Guinness stew, or just here for the Irish cream cupcakes and shamrock shake, we’ve got something delicious and a little green for you.

Two meat and potatoes options:

Easy Beef and Cabbage Shepherd’s Pie
Time: 1 hour, 40 min

Our version uses cabbage instead of the traditional peas (neither of us are fans), carrots, onions, and lean beef in a smooth gravy, all topped off with some simple mashed potatoes. This is such a great all-in-one comfort meal. Plus, it's super shareable (and it makes for amazing leftovers).

Beef and Guinness Stew
Time: 2 hours, 30 min

This stew is hearty and balanced and will feed your whole family. It requires no fancy equipment, just a big pot. It's also a more budget friendly beef option because stew meat tends to be a bit cheaper than other cuts of beef. We load it with tons of veggies, herbs, and a little Guinness stout to bring a bit of bitterness, then let it simmer for the flavors to develop.

Two green sweet treats:

Irish Cream Chocolate Cupcakes
Time: 35 min (plus time to chill frosting)

We can't say enough good things about these cupcakes. The cake sponge is bouncy, chocolatey, and rich but not overly sweet. The Irish cream cream cheese frosting is the perfect sweet-tangy-boozy topper. For a little St. Patrick's day flair, we top with some sparkly green sprinkles. There is Irish cream liqueur in both the cake and the frosting, so these are an adults-only treat.

Lucky Shamrock Shake
Time: 10 min

A fun take on the seasonal Shamrock Shake from McDonald's plus, a little Lucky Charms cereal to bring in some cereal and milk vibes. Our version also includes fresh mint plus an optional crème de menthe boozy boost for extra minty kick. This is a fun indulgent sweet treat that's perfect for this time of year.
