6 Recipes We’re Making This Spring

Wondering what to cook this spring? Start here.

We said we’d be back with spring recipes, and we’re delivering just in time to start your weekend. We think of spring cooking as low-key recipes with bright citrus, fresh herbs, and seasonal produce. Whether you’re cooking for Easter, hosting brunch, or just want something new in the rotation, this is a great place to start.

When in doubt, go with lemon

Lemony Asparagus Orzo
Time: 35 - 40 min

It's creamy but not heavy and packed with bright lemon and fresh herbs.

Tip: cook the orzo in broth and don't drain it. You'll add extra flavor and the remaining starchy water will add to the creaminess of the finished dish.

Lemon Vanilla Scones
Time: 45 min (includes time to chill dough)

These scones are so soft and crumbly, and a winner for any brunch table.

Tip: use a food processor. It blends the dough quickly and makes these scones super easy. Can mix by hand if you don't have one.

Easy and impressive spring mains

Shrimp Salad with Tartar Sauce Dressing
Time: 30 min

It's like popcorn shrimp with tartar sauce but in a fresh, crisp salad.

Tip: don't sleep on the crispy panko, it adds such a satisfying texture. After toasting it in a pan, drain it on a paper towel so it stays crisp.

Gnocchi with Pesto Cream Sauce
Time: 40 min

Spring gnocchi with creamy pesto, asparagus, and crispy pancetta. Rich, bright, and surprisingly easy.

Tip: use store-bought gnocchi to keep things simple, and blend the pesto in a food processor to make it extra easy.

Snackable and Sharable

Homemade Herby Ranch
Time: 10 min

A fresh, herby ranch that’s creamy, balanced, and way better than store-bought.

Our tip: use an immersion blender for the smoothest texture and most herby flavor.

Smoked Salmon Dip
Time: 10 min

Creamy smoked salmon dip that feels fancy but couldn’t be easier.

Our tip: use an electric beater to mix everything up.

Hope you all have a great weekend, and happy cooking!
